Plum + Smoked Salmon Scandi Bowl

Wildly tasty, healthy ​and​ simple​. Showcase slices of our opulent Queen Garnet plum in this vibrant scandi bowl​ for a nutrient-packed lunch or light dinner.

What you’ll need (Serves 2):

  • 2 Queen Garnet plums, finely sliced
  • 1 avocado
  • 1 small fennel, finely sliced
  • Handful watercress
  • 150g hot smoked salmon
  • 200g ancient grain rice blend (or brown rice, quinoa, wild rice blend)
  • Dressing:
  • ¼ cup olive oil
  • ¼ cup Queen Garnet plum nectar
  • 1 tbsp balsamic vinegar
  • 1 tsp wholegrain mustard

How to make it:

  • Begin scandi bowl assembly with ancient grain rice blend at the base and layer over with salmon, watercress, fennel, avocado sliced plums and top with fennel fronds.
  • Whisk olive oil, nectar, balsamic, wholegrain mustard until combined and pour over salad.
